I never thought there would come a day where I'd happily sit down to a pizza made of cauliflower with not a sourdough crust in sight, but lo and behold I've done just that recently and it tasted pretty darn good.
In case you too are searching for healthier options of your favourite goodies then ladies and gentlemen I present to you... guilt free pizza.
You will need (for a personal pizza):
120g shredded cauliflower
pinch of salt/pepper
3 tbs tomato puree
Other toppings as required
Place shredded cauli in a bowl, cover and microwave for 2 mins
Let it cool
Place in a clean tea towel and squeeze out excess moisture leaving you with a small ball of cauli 'dough'
Dump the dough in a bowl and mix with one egg, parmesan, salt, pepper and oregano/herbs as desired.
On a baking sheet/tray spread your 'dough' into the required shape and pop in the over at 180 degrees for 20 mins.
Turn the pizza over, add your tomato, mozzarella and other toppings and then grill for 3/5 mins until golden.
Do not be surprised if this doesn't taste like Papa John's - of course it won't but it's a great healthier version and right now, that works for me! It's very low carb and a great 'fakeaway' meal.
I worked this out to be about 230 calories (depending on what other toppings you use). Serve with a side salad or coleslaw and enjoy!
